Ginger Dressing

We found a copycat recipe for Benihana ginger dressing. It was perfect with one slight modification. Well, two if you count we left out the celery because celery is evil.

Benihana Ginger Salad Dressing

1/4 cup chopped onion
1/4 cup peanut oil
2 tbsp rice wine vinegar
2 tbsp water
1 tbsp chopped fresh gingerroot
1 tbsp soy sauce
1-1/2 tsp tomato sauce
1-1/2 tsp granulated sugar (we added one extra teaspoon)
1 tsp lemon juice
dash salt and pepper

Combine all ingredients in blender container or wok bowl of food processor fitted with steel knife; process until almost smooth. Makes six servings. May be kept refrigerated up to one week.

Servings: 4
